The first taste is a balanced combination, with a truffle aftertaste that is not overpowering, along with a hint of pink Himalayan salt. The quality of the ingredients is evident in every bite. The chips are fat-free, reflecting a thorough frying process.
Distinctive attributes
San Nicasio uses a slow-frying method at low temperatures (120 °C to 140 °C) in extra virgin olive oil from the Priego de Córdoba DOP. This artisanal approach, in line with Slow Food principles, preserves the potatoes’ natural qualities while enhancing texture and flavor. Unlike industrial methods, it also helps reduce the formation of acrylamide, a compound linked to high-temperature cooking. The chips are then delicately seasoned with mineral-rich pink Himalayan salt.
