Coratina is an iconic cultivar from Puglia in southern Italy, particularly around Andria. It is a naturally rich, dense, and expressive olive, known for its very high concentration of phenolic compounds.
Tasted alone, with a spoon, it can be surprising: marked bitterness, intense pungency, almost brutal. This is normal. This power is not meant to be judged in isolation, but to interact with food. When combined with a dish, its strength is distributed, balanced, and serves to enhance the flavors it accompanies. What seemed excessive becomes structuring.
