Coratina finishing extra virgin olive oil

Description

Coratina is an extra virgin olive oil produced from a single carefully selected plot, chosen for its terroir, exposure, and exceptional potential. Harvested early from still-green olives, it yields less oil, but delivers remarkable quality. Naturally rich in polyphenols — around 600 mg/kg — it stands out for its fluid texture, aromatic intensity, and abundance of natural antioxidants. We recommend using it as a finishing oil to preserve all its freshness, flavour, and precious benefits.

Description

For our new finishing oil, we have chosen the queen of Puglia: the Coratina. An iconic variety from the birthplace of Italian olive oil—and the Favuzzi family’s region of origin—the Coratina is celebrated for its vibrant character and exceptional richness.

Usage

Coratina is a finishing olive oil: an oil of such exceptional quality, naturally rich in polyphenols, that we prefer adding it at the very end to preserve its aromas and fully enjoy its benefits.

Just a drizzle is enough to elevate your dishes right before serving: tomatoes, burrata, grilled vegetables, pasta, fish, eggs, or soups. Its intense aromas, elegant bitterness, and peppery finish are at their best when enjoyed raw, where they enhance and amplify the flavours of the dish.

It can also be used for cooking without any problem, like any excellent extra virgin olive oil. But to get the most out of its aromatic richness and high polyphenol content, we recommend using it as a finishing oil, after cooking.

This family business has been producing high quality 100% Italian extra virgin olive oil since 1954. Today, the two sons of the founder have taken over the running of the mill together with the grandson, Saverio Guglielmi. The estate covers an area of over 170 carefully cultivated hectares. Thanks to the combination of experience and the most advanced technology, the extraction system process ensures a high quality standard product, through the monitoring and control of every single stage within 12 hours of the harvesting of native Apulian olives.
