Along with Vialone Nano, Carnaroli rice represents the best quality in Italian rice production. The starch in this rice is of a particular makeup and the grains are very resistant: they retain an excellent capacity for absorbing liquids and the loss of nutritional value during cooking is minimal. Carnaroli rice is ideal for refined dishes, and will make cooking a great risotto easy even for the less experienced.
