Boukman BBQ chicken wings

Serves 4

  • 12 chicken wings cut the joints (throw the small end)
  • 1 lime
  • 7.5 ml (1/2 tbsp.) paprika
  • 7.5 ml (. 1/2 tbsp) onion powder
  • 30 ml (2 tbsp.) of dried chives
  • 5 ml (1 tsp.) salt
  • 45 ml (3 tbsp.) of Boukman hot sauce
  • 7.5 mL (1/2 tbsp) freshly squeezed lime juice
  • 30 ml (2 tbsp.) of freshly squeezed orange juice
  • 0.5 ml (1/8 tsp.) of dried thyme
  • 75 ml (1/3 cup) Boukman spicy mango BBQ sauce Boukman

Preparation

  1. Mix all ingredients (except for chicken, lime and Boukman spicy mango BBQ sauce) to make a paste.
  2. In a bowl, rub chicken with lime and lime juice.
  3. Rinse with hot water and pat dry with paper towels.
  4. Add spice paste and marinate in the fridge for at least 2 hours.
  5. Preheat barbecue.
  6. Lower heat and put chicken wings on the grill. Cook over low heat for 15 minutes on each side, making sure wings don’t burn.
  7. Heat 1/3 cup Boukman spicy mango BBQ sauce (1 minute in the microwave).
  8. Put BBQ sauce and wings in a bowl with a tight-fitting lid.
  9. Shake vigorously until wings are thoroughly coated with sauce.
  10. Serve hot.
