Red Tomato Soup


For 4 persons

  • Olive oil (intense category)
  • 2 diced yellow onions
  • 5 cloves of garlic , chopped in 4
  • 2 tins of  796 ml San Marzano tomatoes
  • Water
  • Cream 35% (optional)
  • Chopped chives
  • Salt


  1. In a pan, heat oil at medium-high. Add onions, garlic and simmer until onions are soft . Add the tomatoes, salt,  cover and  cook 5 minutes.
  2. Mix the soup in a blender it becomes homogenous. Transfer in a saucepan and add water to obtain a smooth consistancy without being too thick. Add cream and check the seasoning.
  3. Serve, garnish with chive and pour olive oil.
