Chicken with cumin, lime and O honey white balsamic

Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 tbsp. tablespoons honey white balsamic vinegar
  • 1/2 tsp. tablespoons soy sauce or tamari
  • 1/2 tsp. freshly ground cumin
  • 2 tbsp. freshly squeezed lime juice tea (approx. 1/2 lime)
  • Salt and pepper to taste
  • 4 chicken breast cutlets

Preparation

  1. Whisk all marinade ingredients in a medium-sized bowl.
  2. Add salt and pepper to taste.
  3. Divide blend into two bowls and set one aside to use as a sauce for serving.
  4. Rinse chicken cutlets and pat dry with a paper towel. Add a bit of salt and pepper to taste.
  5. Add chicken to marinade, cover and leave to stand for 10 to 15 minutes.
  6. Drain chicken and discard marinade. Place chicken on the grill, on medium heat, for 4 to 5 minutes on each side, depending on cutlet thickness.
  7. Remove chicken from heat and leave to stand for 3 to 4 minutes, then cut into thin slices.
  8. Place chicken slices on a bed of couscous or rice in shallow bowls.
  9. Delicately pour the sauce over the chicken just before serving.
