Chicken with cumin, lime and O honey white balsamic

Ingredients
- 1/4 cup extra virgin olive oil
- 2 tbsp. tablespoons honey white balsamic vinegar
- 1/2 tsp. tablespoons soy sauce or tamari
- 1/2 tsp. freshly ground cumin
- 2 tbsp. freshly squeezed lime juice tea (approx. 1/2 lime)
- Salt and pepper to taste
- 4 chicken breast cutlets
Preparation
- Whisk all marinade ingredients in a medium-sized bowl.
- Add salt and pepper to taste.
- Divide blend into two bowls and set one aside to use as a sauce for serving.
- Rinse chicken cutlets and pat dry with a paper towel. Add a bit of salt and pepper to taste.
- Add chicken to marinade, cover and leave to stand for 10 to 15 minutes.
- Drain chicken and discard marinade. Place chicken on the grill, on medium heat, for 4 to 5 minutes on each side, depending on cutlet thickness.
- Remove chicken from heat and leave to stand for 3 to 4 minutes, then cut into thin slices.
- Place chicken slices on a bed of couscous or rice in shallow bowls.
- Delicately pour the sauce over the chicken just before serving.
