Rum chestnut panettone pudding

The holidays are the perfect time to treat yourself without feeling guilty! At Favuzzi, panettones are without a doubt our favourite Christmas delicacy. We await them impatiently all year long and love them so much we confess to having eyes bigger than our bellies when it is time to stock up! However, since they begin to dry out and lose their aromas a few days after being opened, panettones should ideally be eaten within three to four days.

Ingredients

Serves 4

  • 1/2 Favuzzi panettone, cut in cubes
  • 375 mL (1 1/3 cup) milk
  • 200 mL (4/5 cup) 15% cream
  • 3 eggs
  • 1/2 Nielsen-Massey vanilla pod, scraped
  • 100 g sugar
  • 30 mL (2 tablespoons) brown sugar
  • 235 g (1 jar) chestnuts in rum, drained

Preparation

  1. Preheat the oven to 350°F or 180°C.
  2. Butter a square oven-safe dish.
  3. Combine the milk, cream, eggs, vanilla and sugar in a mixing bowl.
  4. Add the chestnut and the panettone cubes and mix well.
  5. Transfer the mixture to the dish and sprinkle with the brown sugar.
  6. Bake in the oven for 45 minutes.
  7. Remove from the oven and leave to cool before unmolding and slicing.
