Favuzzi olive oil granola

Ingredients

  • 2 L (8 cups) of oatmeal
  • 375 ml (1 1/2 cup) maple syrup
  • 375 ml (1 1/2 cup) chopped pecans
  • 250 ml (1 cup) of oat bran
  • 250 ml (1 cup) dried cranberries
  • 180 mL (3/4 cup) Favuzzi extra virgin olive oil
  • 180 mL (3/4 cup) coconut shavings
  • 180 mL (3/4 cup) of wheat flour
  • 5 mL (1 tsp.) cinnamon
  • 2.5 mL (1/2 tsp.) sea salt

Preparation

  1. In a bowl, mix oat flakes, oat bran, wheat flour, cinnamon and fleur de sel.
  2. Add maple syrup and olive oil and blend until liquid ingredients are fully absorbed.
  3. Transfer to a baking sheet with edges at least 2 inches high.
  4. Bake in a 160°C (325°F) oven for 15 minutes.
  5. Remove from oven, mix thoroughly and add pecans and shredded coconut.
  6. Continue baking for 15 to 20 minutes, or until uniformly golden (texture must not be sticky).
  7. Add dried cranberries and leave to cool completely.
  8. Store in an airtight container.
