Favuzzi olive oil granola

Ingredients
- 2 L (8 cups) of oatmeal
- 375 ml (1 1/2 cup) maple syrup
- 375 ml (1 1/2 cup) chopped pecans
- 250 ml (1 cup) of oat bran
- 250 ml (1 cup) dried cranberries
- 180 mL (3/4 cup) Favuzzi extra virgin olive oil
- 180 mL (3/4 cup) coconut shavings
- 180 mL (3/4 cup) of wheat flour
- 5 mL (1 tsp.) cinnamon
- 2.5 mL (1/2 tsp.) sea salt

Preparation
- In a bowl, mix oat flakes, oat bran, wheat flour, cinnamon and fleur de sel.
- Add maple syrup and olive oil and blend until liquid ingredients are fully absorbed.
- Transfer to a baking sheet with edges at least 2 inches high.
- Bake in a 160°C (325°F) oven for 15 minutes.
- Remove from oven, mix thoroughly and add pecans and shredded coconut.
- Continue baking for 15 to 20 minutes, or until uniformly golden (texture must not be sticky).
- Add dried cranberries and leave to cool completely.
- Store in an airtight container.
