Shaved Raw Aspargus Spting Salad with Meyer Lemon
For 4 persons
- 1 bunch fresh Asparagus
- 65 ml O Meyer Lemon Olive Oil
- 1 Lemon Juice
- 30 g coarsely grated Parmesan cheese
- salt and freshly cracked pepper to taste
- Trim asparagus cut ends then, using a vegetable peeler, shave into thin strips. Transfer to a large bowl.
- In a small bowl, whisk together O Meyer Lemon Olive Oil, lemon juice, salt and pepper.
- Just before serving, drizzle over asparagus and toss lightly. Sprinkle Parmesan and serve
