Shaved Raw Aspargus Spting Salad with Meyer Lemon


For 4 persons 

  • 1 bunch fresh Asparagus
  • 65 ml O Meyer Lemon Olive Oil
  • 1 Lemon Juice
  • 30 g coarsely grated Parmesan cheese
  • salt and freshly cracked pepper to taste


  1. Trim asparagus cut ends then, using a vegetable peeler, shave into thin strips. Transfer to a large bowl.
  2. In a small bowl, whisk together O Meyer Lemon Olive Oil, lemon juice, salt and pepper. 
  3. Just before serving, drizzle over asparagus and toss lightly.  Sprinkle Parmesan and serve
