Zucchini, chocolate and grape must bread

- Butter for greasing
- 2 large eggs
- 75 ml grape or fig must
- 125 ml (1/2 cup) Merula extra virgin olive oil
- 75 ml (1/3 cup) dark brown sugar
- 5 ml (1 teaspoon) vanilla extract
- 375 ml (1 1/2 cup) white whole wheat flour
- 125 ml (1/2 cup) all-purpose flour
- 5 ml (1 teaspoon) salt
- 5 ml (1 teaspoon) baking soda
- 5 ml (1 teaspoon) baking powder
- 5 ml (1 teaspoon) cinnamon
- 500 ml (2 cups) grated zucchini (about one medium zucchini)
- 250 ml (1 cup) chocolate chips
- 200 ml (3/4 cup) chopped walnuts
Preparation
- Preheat oven to 350°F (175°C). Grease a 5 x 9 inch loaf pan.
- Grate zucchini with the peel. In a bowl, combine olive oil, eggs, grape or fig must, brown sugar and vanilla, and beat until smooth.
- In a large bowl, mix flour, salt, baking powder, baking soda and cinnamon; add wet ingredients and blend carefully with a spoon.
- Mix in grated zucchini, chocolate chips and nuts. Pour batter into the loaft pan. Cook in the oven for 60 to 65 minutes.
- Prick the center with a spaghetti to check if fully baked. Remove from oven and leave to cool for 15 minutes before unmolding on a rack.
- Ideally,the bread should be left to rest for 8 hours so the chocolate chips can harden but we but you won't be able to wait that long !
