Corn Chowder

Preparation - 30 min
Ingredients
Serves 4 to 6
- 1 bag of Frontier Soups corn chowder mix
- 2 L (8 cups) chicken broth
- 1 Bay leaf
To taste
- 2-3 potatoes, peeled and diced
- 500 mL (2 cups) cooking cream
- One or two cobs of fresh corn, cut into 5 cm slices
- 250 mL (1 cup) cooked chicken cubes, crabmeat or cooked clams
Preparation
- Boil the chicken broth in a pot and add the Frontier Soups corn chowder mixture, potatoes and bay leaf to taste.
- Reduce heat and simmer for 45 minutes.
- Add the cream and corn slices and cook for 15-30 minutes. Remove bay leaf before serving.
Alternative
Add the cream, chicken, crab or shrimp, depending on the desired option, and continue cooking over low heat for 10 minutes. Turn off heat and let stand 5 minutes before serving.
Slow cooker
Place the potatoes in the slow cooker and add the chicken broth, bay leaf and Frontier Soups corn chowder mix. Cover and adjust the cooking to 8 hours on low. Add cream and other desired ingredients and cook an additional hour at elevated temperature. Remove bay leaf before serving.
