Crackers with Feta and Salsa

Ingredients
Serves 6 to 8
- 24 34 degrees poppy seed crackers
- 100 g quality feta or cotija cheese, sliced or broken into 1- to 2-cm pieces
- 1 small basket ripe cherry tomatoes, diced
- 1/4 red onion, diced
- Zest and juice of 1 line
- Chopped fresh coriander, to taste
- Salt and freshly ground pepper
- Boukman medium hot sauce
- Baby spinach or arugula
Preparation
- In a small bowl, mix tomatoes, onion, lime zest and juice and coriander.
- Season with salt and pepper and add a few drops of hot sauce.
- Taste and adjust seasoning as needed.
- Place crackers on a serving dish and garnish each one with a spinach or arugula leaf.
- Add a piece of cheese and a spoonful of salsa.
- Garnish with some coriander and lime and serve immediately.
