Crackers with Feta and Salsa

Ingredients

Serves 6 to 8

  • 24 34 degrees poppy seed crackers
  • 100 g quality feta or cotija cheese, sliced or broken into 1- to 2-cm pieces
  • 1 small basket ripe cherry tomatoes, diced
  • 1/4 red onion, diced
  • Zest and juice of 1 line
  • Chopped fresh coriander, to taste
  • Salt and freshly ground pepper
  • Boukman medium hot sauce
  • Baby spinach or arugula

Preparation

  1. In a small bowl, mix tomatoes, onion, lime zest and juice and coriander.
  2. Season with salt and pepper and add a few drops of hot sauce.
  3. Taste and adjust seasoning as needed.
  4. Place crackers on a serving dish and garnish each one with a spinach or arugula leaf.
  5. Add a piece of cheese and a spoonful of salsa.
  6. Garnish with some coriander and lime and serve immediately.
