Duo of pestos

Ingredients

Serves 4 to 6

Coriander and Thai basil pesto

  • 500 g coriander
  • 150 g Thai basil
  • 50 g (about 1/3 cup) sunflower seeds
  • 70 g (about 3/4 cup) parmesan
  • 1 clove garlic
  • 75 ml (5 tablespoons) Favuzzi extra-virgin olive oil
  • Juice of 1 lime
  • Salt and pepper, to taste


Dried tomato pesto

  • 100 g Favuzzi semi-dried tomatoes
  • 25 g (about 1/3 cup) parmesan
  • 25 g (about 2 tablespoons) pine nuts
  • 45 ml (3 tablespoons) Favuzzi extra-virgin olive oil

Preparation

  1. For each pesto, combine all ingredients except the oil in a food processor.
  2. Turn on the processor and drizzle in the oil until a spreadable consistency is achieved.
  3. Serve with toasted bread rounds or over pasta.
