Duo of pestos

Ingredients
Serves 4 to 6
Coriander and Thai basil pesto
- 500 g coriander
- 150 g Thai basil
- 50 g (about 1/3 cup) sunflower seeds
- 70 g (about 3/4 cup) parmesan
- 1 clove garlic
- 75 ml (5 tablespoons) Favuzzi extra-virgin olive oil
- Juice of 1 lime
- Salt and pepper, to taste
Dried tomato pesto
- 100 g Favuzzi semi-dried tomatoes
- 25 g (about 1/3 cup) parmesan
- 25 g (about 2 tablespoons) pine nuts
- 45 ml (3 tablespoons) Favuzzi extra-virgin olive oil
Preparation
- For each pesto, combine all ingredients except the oil in a food processor.
- Turn on the processor and drizzle in the oil until a spreadable consistency is achieved.
- Serve with toasted bread rounds or over pasta.
