Riz pudding

Ingredients

Serves 6 to 8 

  • 250 g (1 cup) Carnaroli rice
  • 1 L (4 cups) of milk
  • 250 g (1 cup) sugar
  • 1 vanilla pod
  • Cooled chocolate bar 80g containing 70% cocoa

Preparation

  1. Bring to the boil 4 cups of lightly salted water and cook rice for 10 minutes.
  2. Meanwhile, bring milk to the boil in a saucepan and scrape in vanilla seeds from the pod.
  3. Drain rice and add to saucepan with milk, vanilla and sugar.
  4. Cook for 10 to 15 minutes, until creamy.
  5. Pour the rice pudding, still warm, into glasses or bowls.
  6. Meanwhile, place chocolate on a baking sheet, flat side up, and make shavings by scraping with a chef’s knife angled at 45 degrees.
  7. Garnish cooled rice pudding with chocolate shavings. Refrigerate for 1 hour and serve cold.
