Key Lime Sole Fillets

Ingredients
Serves 4
- 4 Sole fillets of 250 g each *
- 180 mL (3/4 cup) Braswell Key Lime Marinade for Sole
- Favuzzi Fleur de sel
- Freshly ground pepper
- Favuzzi Extra-Virgin Olive oil
Garnish
Mixed vegetables julienne, either:
- carrots
- leeks
- celery
- Green Dragon lemonaise by Ojai Cook
- 2 limes, cut into wedges
* Depending on the season or type of fish available, this recipie can be made with another white fish such as tilapia, turbo, cod or pangasius.
Preparation
- Place the fish fillets in a dish and cover evenly with marinade.
- Seal with plastic wrap and refrigerate for about fifteen minutes.
- Meanwhile, heat a little olive oil in a pan, sauté the vegetables and reserve.
- Remove the fillets from the fridge. Add a little oil in the same pan and fry the fillets for about two minutes on each side.
- Season with salt and pepper to taste and with Favuzzi Fleur de Sel .
- Serve the fillets with vegetables, a fresh lime wedge and Green Dragon lemonaise (made with mustard, coriander and wasabi) by Ojai Cook.
