White Bean Soup with Bacon Crumble

Ingredients

Serves 4 to 6

  • 15 ml (1 tablespoon) butter
  • 1 shallot, finely sliced
  • 2 bacon slices, roughly sliced
  • Salt and pepper to taste
  • 1 can white beans, rinsed and drained
  • 1 L (4 cups) chicken broth
  • 8 slices crispy cooked bacon, finely chopped
  • Drizzle of Favuzzi truffle olive oil

Preparation

  1. Melt butter in a pan and gently sauté shallot and 2 bacon slices, until bacon takes on a golden colour.
  2. Add white beans and chicken broth and season with salt and pepper.
  3. Cook on medium heat for 20 minutes, then purée with a stick blender until texture is nicely creamy.
  4. Adjust seasoning as needed.To make the bacon crumble, cook 8 bacon slices until crispy.
  5. Leave to rest, then chop finely.
  6. Serve the soup in bowls, then garnish with bacon crumble and a drizzle of olive oil.
