White Bean Soup with Bacon Crumble

Ingredients
Serves 4 to 6
- 15 ml (1 tablespoon) butter
- 1 shallot, finely sliced
- 2 bacon slices, roughly sliced
- Salt and pepper to taste
- 1 can white beans, rinsed and drained
- 1 L (4 cups) chicken broth
- 8 slices crispy cooked bacon, finely chopped
- Drizzle of Favuzzi truffle olive oil
Preparation
- Melt butter in a pan and gently sauté shallot and 2 bacon slices, until bacon takes on a golden colour.
- Add white beans and chicken broth and season with salt and pepper.
- Cook on medium heat for 20 minutes, then purée with a stick blender until texture is nicely creamy.
- Adjust seasoning as needed.To make the bacon crumble, cook 8 bacon slices until crispy.
- Leave to rest, then chop finely.
- Serve the soup in bowls, then garnish with bacon crumble and a drizzle of olive oil.
