Lentil and sausage soup

  • 454 g (1 bag) of lentil soup and sausages Frontier Soups
  • 30 ml (. 2 tbsp) extra virgin olive oil
  • 450 g of sweet Italian sausage crumbled
  • 3 L (12 cups) beef broth
  • 3 medium zucchini, diced
  • 796 ml (1 can) diced tomatoes
  • 250 ml (1 cup) red wine

Preparation

  1. In a large pot, sauté the crumbled sausage in oil until golden.
  2. Rinse lentils and drain. Put the lentils, the bagged vegetables and the stock in the pot.
  3. Bring to the boil, lower heat, cover and simmer for 30 minutes, stirring from time to time.
  4. Add zucchini, cover and continue cooking for 30 minutes longer.
  5. Add tomatoes and wine and simmer, uncovered, for 15 to 20 minutes.
  6. Serve with a drizzle of extra-virgin olive oil.
