Lentil and sausage soup

- 454 g (1 bag) of lentil soup and sausages Frontier Soups
- 30 ml (. 2 tbsp) extra virgin olive oil
- 450 g of sweet Italian sausage crumbled
- 3 L (12 cups) beef broth
- 3 medium zucchini, diced
- 796 ml (1 can) diced tomatoes
- 250 ml (1 cup) red wine
Preparation
- In a large pot, sauté the crumbled sausage in oil until golden.
- Rinse lentils and drain. Put the lentils, the bagged vegetables and the stock in the pot.
- Bring to the boil, lower heat, cover and simmer for 30 minutes, stirring from time to time.
- Add zucchini, cover and continue cooking for 30 minutes longer.
- Add tomatoes and wine and simmer, uncovered, for 15 to 20 minutes.
- Serve with a drizzle of extra-virgin olive oil.
