Mustard Roasted Chicken with Caramelized Brussels Sprouts

Ingredients

Serves 4

Chicken

  • 4 grain-fed chicken breasts

  • 100 ml (⅓ cup) Joe Beef smoked apple mustard

  • 45 ml (3 tablespoons) 2% plain yogurt
  • Half a bunch of parsley, chopped
     

Side dish

  • 16 Brussels sprouts
  • 30 g (1 oz) unsalted butter
  • 30 ml (2 tablespoons) Favuzzi Champagne vinegar
  • 50 g (1 ¾ oz) parsley, chopped
  • Salt and pepper, to taste

 

Preparation

  1. In a bowl, combine the mustard and yogurt with half the chopped parsley.
  2. Add chicken and cover with cling film.
  3. Refrigerate for 24 to 48 hours.
  4. To cook, remove chicken from marinade, wipe off excess and season with salt and pepper.
  5. Cook on a hot grill at least 5 minutes per side, depending on thickness.
  6. To make the side dish, cut Brussels sprouts in half.
  7. Melt butter in a pan over medium heat until it begins to foam.
  8. Add sprouts and sauté until golden, about 5 minutes depending on size.
  9. When sprouts are caramelized, deglaze with vinegar and reduce until dry.
  10. Just before serving, sprinkle with the rest of the chopped parsley.
