Quinoa salad with apples and mature cheddar

Ingredients
- 1 cup of white or red quinoa
- 1 cup apple juice
- 3/4 cup water
- 2 tbsp. apple vinegar Gardeny
- 1 c. tablespoons hot sauce Boukman Maple and apples
- 1 c. tablespoons mustard Mrs. McGarrigle's
- Freshly ground pepper and salt
- 2 red apples with peel
- 1 celery stalk
- 1/2 cup mature cheddar
- 2 green onions
Preparation

Rinse quinoa in a sieve.

In a saucepan, bring apple juice, water and quinoa to the boil. Lower heat to medium-low and cook uncovered until liquid is absorbed, about 10 to 15 minutes. Turn off heat and leave quinoa to fluff up for 5 minutes, uncovered.

Meanwhile, in a large bowl, whisk apple vinegar, Boukman Maple and Apple hot sauce and wholegrain mustard. Add a generous amount of pepper and a pinch of salt.

Drizzle in a bit of oil to emulsify.

Dice apples, celery and cheese.

Combine green onions and all other ingredients in the bowl with the dressing, mix and serve.
