Quinoa salad with apples and mature cheddar

Ingredients

  • 1 cup of white or red quinoa
  • 1 cup apple juice
  • 3/4 cup water
  • 2 tbsp. apple vinegar Gardeny
  • 1 c. tablespoons hot sauce Boukman Maple and apples
  • 1 c. tablespoons mustard Mrs. McGarrigle's
  • Freshly ground pepper and salt
  • 2 red apples with peel
  • 1 celery stalk
  • 1/2 cup mature cheddar
  • 2 green onions

Preparation

  1. Rinse quinoa in a sieve.

  2. In a saucepan, bring apple juice, water and quinoa to the boil. Lower heat to medium-low and cook uncovered until liquid is absorbed, about 10 to 15 minutes. Turn off heat and leave quinoa to fluff up for 5 minutes, uncovered.

  3. Meanwhile, in a large bowl, whisk apple vinegar, Boukman Maple and Apple hot sauce and wholegrain mustard. Add a generous amount of pepper and a pinch of salt.

  4. Drizzle in a bit of oil to emulsify.

  5. Dice apples, celery and cheese.

  6. Combine green onions and all other ingredients in the bowl with the dressing, mix and serve.
