Root Vegetables

Ingredients
Seasonal Vegetables to taste :
- Carrots
- Parsnips
- Zucchini
- Shallots
- Onions
- Fennel
- Leeks
- Rutabagas
- O extra virgin olive oil
- O jalapeño and garlic olive oil
Preparation
- Cut vegetables into pieces.
- In a large pan, sauté in exta virgin olive oil.
- Spread in a single layer on a baking sheet.
- Cook in the centre of the oven preheated to 450°F (230°C). Stirring often, until tender (about 40 minutes).
- Remove from oven and drizzle with O jalapeño and garlic oil 6. Sprinkle with salt before serving
