Root Vegetables

Ingredients

Seasonal Vegetables to taste :

  • Carrots
  • Parsnips
  • Zucchini
  • Shallots
  • Onions
  • Fennel
  • Leeks
  • Rutabagas
  • O extra virgin olive oil
  • O jalapeño and garlic olive oil

Preparation

  1. Cut vegetables into pieces.
  2. In a large pan, sauté in exta virgin olive oil.
  3. Spread in a single layer on a baking sheet.
  4. Cook in the centre of the oven preheated to 450°F (230°C). Stirring often, until tender (about 40 minutes).
  5. Remove from oven and drizzle with O jalapeño and garlic oil 6. Sprinkle with salt before serving
