Sunday Baked Eggs

Serves 4
- 500 ml (2 cups) shredded Cheddar cheese
- 500 ml (2 cups) of mango salsa & lime Stonewall Kitchen
- 6 eggs
- Salt and pepper
- Favuzzi Extra virgin Olive oil
Preparation
- Preheat oven to 350°F.
- Oil 6 ramekins and sprinkle 1 tablespoon of cheese on the bottom of each one.
- Cover cheese with a spoonful of mango and lime salsa.
- Break an egg over the salsa.
- Season with salt and pepper.
- Top each egg with another spoonful of salsa and more cheese.
- Bake in the oven for approximately 20 minutes, or until eggs are done.
