Sunday Baked Eggs

Serves 4

  • 500 ml (2 cups) shredded Cheddar cheese
  • 500 ml (2 cups) of mango salsa & lime Stonewall Kitchen
  • 6 eggs
  • Salt and pepper
  • Favuzzi Extra virgin Olive oil 

Preparation

  1. Preheat oven to 350°F.
  2. Oil 6 ramekins and sprinkle 1 tablespoon of cheese on the bottom of each one.
  3. Cover cheese with a spoonful of mango and lime salsa.
  4. Break an egg over the salsa.
  5. Season with salt and pepper.
  6. Top each egg with another spoonful of salsa and more cheese.
  7. Bake in the oven for approximately 20 minutes, or until eggs are done.
