Demigrilled Scallops

Ingredients

For 4 persons :

- 400 g celeriac

- 200 g scallops

- 10 ml lemon syrop

- 150 g fish stock

- 20 ml lemon juice

- 100 ml planeta olive oil

- 100 g crumble bread

- 1 garlic

- 16 g persil

- 75 g onion

- 20 g sugar

- 20 ml balsamic vinegar

- 20 ml soia sauce

- 3 g chopped ginger

- Water q.b

Preparation

  1. Mix together persil, crumble bread, cold fish stock, lemon syrup and lemon juice.
  2. Put in a pan, chopped onion, sugar, balsamic vinegar, soia sauce, ginger, oil (20 ml) and water you need. Cook for ½ hour, mix and sieve all.
  3. Steam the celeriac.
  4. In a pan frie burn only one side of scallop an pose on the top of the steamed celeriac cubes.
  5. Then, add 2 spoon of persil and a little bit of onion sauce
