Poached Chicken with Olives

Ingredients

Serves 4

  • 4 skinless, boneless grain-fed chicken breasts (about 200 g each)

  • 150 Favuzzi Leccino black olives (or Kalamata olives)
  • 796 ml (1 can) Favuzzi peeled tomatoes
  • 100 ml (1/2 cup) Joe Beef steak sauce
  • 60 ml (4 tablespoons) fresh Italian parsley, chopped
  • A drizzle of Intense Favuzzi extra virgin olive oil
  • Salt and pepper to taste

 

Preparation

  1. In a saucepan, heat tomatoes with steak sauce and olives until the mixture begins to boil.
  2. Season with salt and pepper.
  3. Put the 4 chicken breasts in the pan and cover well with tomato and olive mixture.
  4. Bake in the oven at 350 degrees F (180 degrees C) for 30 minutes.
  5. Remove from the oven and serve each portion on a bed of pilaf rice.
  6. Just before serving, drizzle with olive oil and garnish with chopped parsley.
