Poached Chicken with Olives

Serves 4

4 skinless, boneless grain-fed chicken breasts (about 200 g each)
- 150 Favuzzi Leccino black olives (or Kalamata olives)
- 796 ml (1 can) Favuzzi peeled tomatoes
- 100 ml (1/2 cup) Joe Beef steak sauce
- 60 ml (4 tablespoons) fresh Italian parsley, chopped
- A drizzle of Intense Favuzzi extra virgin olive oil
- Salt and pepper to taste
Preparation
- In a saucepan, heat tomatoes with steak sauce and olives until the mixture begins to boil.
- Season with salt and pepper.
- Put the 4 chicken breasts in the pan and cover well with tomato and olive mixture.
- Bake in the oven at 350 degrees F (180 degrees C) for 30 minutes.
- Remove from the oven and serve each portion on a bed of pilaf rice.
- Just before serving, drizzle with olive oil and garnish with chopped parsley.
