Tomato fried eggs

Ingredients

  • 5 c. tablespoons of extra virgin olive oil
  • 1 crushed garlic clove
  • ½ tsp. mashed tea hot peppers Favuzzi
  • 1 San Marzano tomatoes A.O.P. (796 ml)
  • 1 c. tablespoons dried oregano
  • 1 c. chopped fresh parsley
  • 8 eggs
  • Salt to taste
  • Grated Parmesan cheese to taste

Preparation

  1. In a large pan, heat oil over medium heat with garlic and hot pepper paste and cook for 1 minute. Do not brown.
  2. Roughly crush tomatoes by hand or with a stick blender and add to pan.
  3. Add parsley and oregano and simmer for about 15 minutes.
  4. Break eggs into sauce and cook until white is set.
  5. Salt to taste and garnish with Parmesan.
  6. Transfer eggs to plates with a spatula and spoon tomato sauce over each serving.
  7. Serve with good crusty bread.
