Tomato fried eggs

Ingredients
- 5 c. tablespoons of extra virgin olive oil
- 1 crushed garlic clove
- ½ tsp. mashed tea hot peppers Favuzzi
- 1 San Marzano tomatoes A.O.P. (796 ml)
- 1 c. tablespoons dried oregano
- 1 c. chopped fresh parsley
- 8 eggs
- Salt to taste
- Grated Parmesan cheese to taste
Preparation
- In a large pan, heat oil over medium heat with garlic and hot pepper paste and cook for 1 minute. Do not brown.
- Roughly crush tomatoes by hand or with a stick blender and add to pan.
- Add parsley and oregano and simmer for about 15 minutes.
- Break eggs into sauce and cook until white is set.
- Salt to taste and garnish with Parmesan.
- Transfer eggs to plates with a spatula and spoon tomato sauce over each serving.
- Serve with good crusty bread.
